Beans

  • Virgin olive oil – 2tbsp 
  • Onion – ½, chopped 
  • Garlic cloves – 3, smashed

  • Chipotle pepper in adobo sauce – 1 canned, chopped, 1 tbsp adobo sauce 
  • Cumin – 1tsp, ground 
  • Black beans – 15-ounce, rinsed and drained 
  • Loosely packed cilantro – ¼ cup, chopped 
  • Salt – 1tsp 

Waffles 

  • Whole milk – 1 ¾ cups 
  • Onion – 1/4 cup chopped 
  • Garlic clove – 1 
  • Jalapeno pepper – ½ seeded and chopped 
  • Sugar – 1tbsp 
  • Salt – 1tsp 
  • Vegetable oil – for greasing 
  • Silvana’s Kitchen Gluten-Free All-Purpose Flour – 1 cup 
  • Gluten-free masa harina – ¾ cup 
  • Baking powder – 2tsp 
  • Eggs – 2, lightly beaten 
  • Unsalted butter – ½ cup, melted and cooled 
  • Crumbled queso fresco, sour cream, cilantro leaves, lime wedges, sliced avocado for serving

Heat the olive oil in the medium saucepan. Add garlic and onion, and cook them for 8 minutes over moderate heat until they are soft. Now stir in the tomatoes, adobo sauce, chipotle pepper, and cumin for 5 minutes. Stir the cilantro leaves, beans, and salt for 3 minutes until all the ingredients are heated enough. 

Blend the milk, garlic, onion, jalapeno, salt, and sugar. Make sure that you have preheated the waffle iron to medium-high. Apply vegetable oil for grease. Whisk the flour with baking powder and masa harina in a large bowl. Now whisk the eggs, milk mixture, and butter until they are combined. In each waffle iron square, pour ¼ cup of batter, and close it to cook for 5 to 6 minutes, until they are crispy. 

In a large skillet, heat the butter and crack the eggs into it. season them salt and pepper. Cook them over moderate heat for 3 minutes and flip them once.   • Salt – 1tsp 
  • Egg yolks – 3, lightly beaten 
  • Active dry yeast – 1tsp 
  • All-purpose flour – 1 ½ cups 
  • Whole wheat flour – ¾ cup
  • Rye flour – ¾ cup
  • Mashed potatoes – 1 cup, room temperature 
  • Unsalted butter – 1 stick (4 ounces), melted 
  • Egg whites – 3 
  • Sugar – 2tbsp

Warm the milk over moderate heat in a medium saucepan. Remove it from the heat when the bubbles start appearing on the edges. Stir it in the cornmeal, chocolate, molasses, salt, and caraway seeds. Let the mixture cool down to room temperature. 

Add the yeast and yolks to the batter. Stir the all-purpose flour when yeast is dissolved properly. Cover it loosely with the plastic wrap and let it stand for 1 hour in a warm place. Now stir the rye flours and whole wheat and refrigerate it overnight with a covering. 

Preheat the waffle iron and bring the batter to room temperature. Stir the mashed potatoes in melted butter. Mix it with the batter. Beat the egg whites with sugar. With a rubber spatula, fold one-third of beaten whites into the batter. Fold the remaining whites. 

Pour 1 ½ cups of waffle batter into preheated waffle iron and bake for 7 minutes until they are crispy and brown. Now transfer the waffles into a platter and cover them with a loose foil. Before serving, top them with poached eggs, sliced-smoked salmon, and poached eggs.

Ingredients

  • Gluten-free sorghum flour – ½ cup 
  • Gluten-free millet flour – ½ cup 
  • Silvana’s Kitchen Gluten-Free All-Purpose – 1 cup 
  • Whole caraway seeds – 1tsp 
  • Caraway – 1tbsp, finely grounded 
  • Cinnamon – 1tsp 
  • Salt – ½ tsp 
  • Raisins – ½ cup, soaked and drained 
  • Whole milk – 1 ½ cup 
  • Eggs – 2  
  • Unsalted butter – 1/3 cup, melted and cooled 
  • Honey – 2tbsp 
  • Vegetable oil – for greasing 

Whisk the sorghum flour with all-purpose flour, millet flour, whole caraway seeds, baking powder, ground caraway, salt, and cinnamon. Stir the raisins. Whisk the milk with the eggs, honey, and butter into a flour mixture in a small bowl.  Now preheat at medium-high and grease the Belgian waffle iron. Pour 1/3 cup of batter into each waffle iron square. Bake it for 4 minutes until crisp. You can serve it with maple syrup if you want to.

  • Flour – 2 cups 
  • Baking powder – 1tbsp 
  • Salt – ¾ tsp 
  • Buttermilk – 1 ¼ cups

  • Fresh herbs – 1/3 cup, finely chopped
